Amantia Ice Wine

After having elaborated red and rose wines in the Designation of Origin Arlanza,  we started the adventure to make ice wine …with a fantastic success.

The Spanish Michelin-stars cooks Juan Mari Arzak and Andoni Luis Aduriz were the first ones seduced by this 100% Tempranillo grape delicatessen.

Amantia

Amantia Ice Wine. The ‘Ice Grape’ is the fruit resulting from a late hasvest. The grape is allowed to over ripen on the vine until the first frost of winter. The variety is 100% Tempranillo.

Ice wine is a wine made with frozen grapes, as special as delicious; tasty, intense, aromatic, sweet and bitter. Instead of harversting the grapes in the most traditional dates of September, it’s left over-maturing in the vineyard and is left there till the first frosts take place;  it makes the grape to have a strong sugar concentration. When the grape freezes, water expands and breaks the grape’s skin. This way, more water is lost and sugar is more concentrated.

Ageing for four months in American oak casks and finished in bottles.

All that makes a very limited production with a high risk as it all dependes on the year’s climatology and not every year ‘ice wine’ is made, reason why the wine has such a high price.

The must got at the beginning of the press is a natural concentrate, rich in bouquet, very concentrated and with a hight acidity.

An excellent accompaniment for appetizers and desserts simply enjoyed on its own.

Tasting notes

Look: Red wine amber highlights.
Nose: aroma of raisiny fruit, honey and jam,
Palate: naturally sweet on the palate with a fresh acidity.

Aging: 4 monthts  in French and American oak barrels.

Alcohol content: 13,5 %

Temperature to serve (ºC): Best served at temperatures between 8 and 10º
